    My recommendation is to use QuickTime Pro. It'll allow you to split up video files using cut-copy-paste methods.

    Ummmm, well no, you're really not supposed to do that. There is a very real risk of corrupting the data on the thumb drive, regardless of whether you are on Mac or Windows. On Windows, you should still unmount USB drives using the "Safely remove hardware" icon in the system tray.

    Also if you have GarageBand that makes for a very good way of recording voice-overs on a musical backing track, as you can adjust the volume of each channel seperately over the timeline, and it can even set these automatically using voice detection (in the current version anyway).

    How do you figure that will save space? If you have 100 photos in your iPhoto library, that takes up as much space as 100 photos. If you delete them, you won't have them anymore.
