Favorites in Open/Save Dialogues

Is there an easier way to delete favorites in Open/Save dialogues other than to open ~/Library/Favorites?

I'm still getting the "documents" folder (in favorite places) and "Home" & "iDisk".

Can I be more selective about what appears when I click that double-ended radio button?

Your 'Documents' folder is a natural item to find in Favorites (most software defaults to the Documents folder.) If you really need to use Favorites, just add what you like manually (under the File menu) and delete items you prefer not to use from the Favorites folder. I'm not sure if documents won't return automatically (it would be a favorite on most systems, anyway) Hope this non-answer helps out! :)
