Quicktime 7 - handles MIME types when I tell it not to

OSX 10.4. Quicktime 7.0.

The issue that I encounter is QT's determination to handle MIME types which I have specifically deselected in Preferences.
(i.e., MP3, aiff, etc.)

There was one point last night when QT stopped handling those files, but that was before I deselected them in Pref's. ??

I would ideally like to download the files and be able to play them later in iTunes.

Any advice on how to download without going through QT?
