Setting default PDF viewer to Adober Reader?

How do you set the default PDF viewer to Adober Reader, instead of, Preview?

I know if you click on a PDF file in Finder that you can choose it manually, but how do you set it permanently?

To change most any program opening certain kind of files is easy. Just highlight a file (in your case a PDF file) and then do a Get Info (Command button+i). Then chose a the program you want to open the file with, then choose "Change All". You then are done.
