I actually just got Acrobat Pro over the course of this thread. That Simplify PDF feture is pretty much what the doctor ordered. Use the 'Print to PDF' which tends to generate a honkin'-ass multi-page PDF then use Acrobat to simply it. This is about as simple as the workflow gets. However...

I use Illustrator every day myself and find that while it's quite stable on a G5 it's pretty buggy on my iBook 800. I see a lot of the Apple crash reporter.
