How do I put my apps on my iTouch?

I have an eMac with 10.4.11 (not intel). I would like to download the 2.0 firmware for my iTouch, but not sure how. I have iTunes 9.2.1 with a couple of iTouch apps transferred fr wife's computer. When I connect my iTouch I can't get these apps to sync, nor does my iTouch show up on my desktop like my old iPod did (altho it shows up just fine in iTunes). What do I need to do in order to sync these apps to my iTouch?
 
would require at least the retail version of 10.5, of course. i thought OS 2.0 didn't require iTunes 10/Leopard? Maybe I remember it wrong...
