The VHS (analog) converter is the key, its hardware and software capabilities determine what you get into your computer. DV is the output of this type of device, your data transfer mechanisim (iMovie FCp or Adobe etc) reads this data stream and dosnothing to it.
I've got a Fomac Studio Pro, I've also got Adobe Permier 6.5 and iMovie, there is no difference in quality. There maybe a difference and representation on the monitor, but the data is untouched.
