How do you add a screen saver to the list of possibilities in the sys prefs menu that you see when you click on display then options?

Put the .saver file into the folder /Library/Screen Savers/ (to allow all users to see it) or in your home folder's ~/Library/Screen Savers/ (to keep it to yourself)

Ok - so how do you make or where do you get .saver files?

Yeah. VersionTracker usually has some cool ones. Check out ifs. Quite possibly one of the coolest screensavers I've seen since Plasma Tunnel.
